One of my favourite overseas design blogs is Sweet Paul . Paul is a food and prop stylist and crafter who says he “packed his Louis Vuitton and moved from Oslo to New York to live and love”. His blog is full of fun and stylish stuff, including some great recipes he cooks up in The Big Apple.Last week I found this quick and easy mushroom sauce that’s ideal if you’re in the mood for a rich and creamy pasta. It’s also great simply smothered over a baked potato or a veggie burger. Enjoy! Ingredients • 250g of mushrooms, finely chopped • 1 onion, finely chopped • 2 garlic cloves, finely chopped • ½ cup of veg stock • 1 ½ cups of cream • 2 tbsp of fresh dill, chopped • salt & pepper to taste Start by slicing 250g of mushrooms and finely chop 1 onion and 2 garlic cloves. Heat up a pan and sauté mushrooms, onion and garlic in 2 tbsp olive oil until the mushroom starts to golden and the onion is soft. Add 1/2 cup of veg stock, 1 1/2 cup of cream and 2 tbsp chopped fresh dill. Let it simmer for 5 minutes and season with salt and pepper. Cook up enough pasta for 4 people, remember to add salt to the water. Boil until al dente, strain and place in a bowl. Add the sauce, mix and serve with shaved Parmesan on top. |
