This wine range portrays the inspiration found by the winemaker in the varying terroirs of the area and harnessing his personal talent and skills to optimise the characteristics the grape varieties. The vineyards of some 8 hectares in extent grow in ideal granite and shale soils in the Voor-Paardeberg area of the Cape Coastal Region, receiving the cooling effect of coastal breezes during the afternoon.
The grapes had 48 hours of cold maceration and alcoholic fermentation started naturally. Once a fermentation level of about 2° Balling had been reached, inoculation with a commercial yeast took place before alcoholic fermentation at 18 - 20°C. Two weeks’ skin contact was allowed postfermentation.
The wine was matured for 12 months in second and third fill small French oak barrels. Final blending took place from the best selected barrels.
This elegant wine, with its deep ruby colour, shows a light smoky nose with a dash of vanilla and spice. Well-balanced on taste, with fruit-cake complexity and a soft white pepper spiciness carrying through in the lingering, silky aftertaste.
