The hotel’s team of chefs, headed by Michelin-trained executive Chef, Stefan Schmidt, has been hard at work preparing for the culinary highlight of the year.
With special menus planned for Christmas Eve, Christmas Day and New Year’s Eve, celebrations will be in full swing come December 2015.
Focusing on updating traditional favourites with a modern twist, Schmidt comments on the festive menus, “While we’ve kept the most-loved flavour combinations – gammon and pineapple, lamb and rosemary - we have worked hard to ensure that the dishes also surprise and delight guests.”
Festive feasting starts on Christmas Eve, with a four-course dinner menu for R258 per person – or R387 per person with wine. With a choice of two dishes for starters and main course, crispy skin fried duck breast, rubbed with organic rooibos takes centre stage, along with the option of South African beef fillet. Light and refreshing, this meal ends with lime pana cotta served with a duo of chocolate and caramelized nut brittle.
Moving on to Christmas day, an extensive lunch buffet will be served. Tables will be laden with three courses of traditional and modern favourites - from smoked bacon and melon salad with fried halloumi to sweet cherry and pineapple glazed gammon and slow roasted herb stuffed rolled lamb shoulder. Sweet-toothed diners will be spoilt for choice, with no less than six desserts on offer, including rich dark chocolate and mint cake and Christmas pudding with coconut custard. This lunch-time feast costs R325 per person and includes a welcome drink, amuse bouche, tea and coffee. For those preferring to celebrate in the evening, Trees Restaurant is offering a three course set menu for dinner on 25 December for R258 per person – or R387 per person with wine. With a selection of two dishes per savoury course, including Gravlax of Franschhoek salmon trout and Glazed gammon skewer with pineapple, this dinner is perfect for those looking for a more intimate Christmas celebration.
The kitchen team is back in full-force for New Year’s Eve, ensuring the festivities continue well into 2016. A playful menu will be on offer, with each dish or course centred around themes or questions, such as ‘What came first, the chicken or the egg?’ Main course will have the choice of ‘grazing cattle’ – featuring hay-smoked beef fillet – or ‘upstream’ – salmon trout with dill pommes puree. Dessert takes the form of ‘Sheep in meadow’ - white chocolate panna cotta, goat’s cheese sorbet, passion fruit coulis, dried berry soil and candyfloss. A two-course version of this menu costs R248 per person, with three-courses costing R298 per person. Menus with wine are available at R372 and R447 per person, respectively.
