Green-on-Green Salad

SERVES: 4


METHOD

  1. Mix together in blender until smooth
  2. Add a little more milk if the sauce is too thick
  3. Arrange th salad ingredients on a platter, then top with some of the sauce, some salt and pepper.
  4. Serve the rest of the sauce on the side

INGREDIENTS

1 small head gem lettuce leaves, rinsed
2 avocados, halved and peeled
½ English cucumber, shaved with a mandolin or vegetable peeler
1 cup frozen petit pois (peas), rinsed under hot water until they are just thawed
a handful of watercress, rinsed

For the dressing (makes 1 cup)

100g blue cheese (Gorgonzola works well)
½ cup sour cream (or buttermilk)
45ml milk
30 - 45ml apple cider vinegar
juice of 1 small lemon
a handful of chopped chives
salt & pepper, to taste
