Zucchini Pizza

Method

  1. Preheat the oven to 180°C.
  2. Prepare a baking tray and line with baking paper. Grease the baking paper.
  3. To make the zucchini base, add all the ingredients together in a bowl and mix thoroughly.
  4. Spoon the mix onto the prepared baking sheet and spread it out into a circle.
  5. Place in the oven for 20-25min or until a light golden colour.
  6. Place a pot of water on the stove with some salt and bring to the boil.
  7. Blanch the asparagus, green beans and peas.
  8. When the zucchini base is done, arrange the speck, green vegetables and mozzarella in a circle around the edge of the pizza base.
  9. Break open an egg in the middle of the pizza without breaking the yolk.
  10. Sprinkle with salt and place in the oven for 7-10min or until the egg is cooked.
  11. Remove from the oven and serve immediately.

 

Ingredients                                                Makes 1 pizza

For the zucchini base:
6 zucchinis, grated
1 cup Parmesan cheese, grated
2 cloves garlic, chopped
1 free-range egg
2/3 cups spelt flour
1 tbsp oregano, chopped
2 tsp salt
1 tsp pepper

For the filling:
100g asparagus
50g green beans, sliced lengthways
50g fresh peas
150g speck
150g Bocconcini mozzarella
1 free-range egg
1 tsp salt
