Warm Winter Apple Juice

Makes 2 litres

  • 10 apples
  • 3 tbsp sugar
  • 3 cinnamon sticks
  • 1 small thumb of ginger, sliced
  • 3 tbsp honey
  • 2 thick pieces of lemon zest
  • 2 Rooibos tea bags

Place the apples and the sugar in a large pot. Place over a medium heat and allow the apples to soften and the sugar to caramelise a little.

Add all the other ingredients, except for the rooibos tea bags, leave to cook for another 3 min, before adding 3 litres of cold water. Bring to a gentle simmer and continue cooking for 1 hour. 

Add the tea bags and leave to cook for about 20 min. 

Taste and adjust the flavour, adding extra honey or lemon if necessary.
