- 650g summer or winter melon, peeled, deseeded and roughly chopped
- 1 large cucumber, peeled and roughly chopped
- 40ml lemon juice 100ml elderflower cordial
1. Blend all of the ingredients in a food processor until smooth. Strain through a sieve.
2. Churn strained liquid in an ice cream machine for 30-35 minutes, and place in freezer until ready to use.
