Plum, Sake and Ginger Sorbet

  • 5 plums
  • 1 cup of sake 
  • 20ml of ginger, juiced
  • juice and zest of half a lemon
  • 1 cup of caster sugar
  • 1 cup of distilled water

Dice plums and purée them with the sake, juiced ginger, lemon juice and lemon zest. In a saucepan bring the sugar and the water to a boil; once the sugar is dissolved take off the heat and let cool. Then add the plum purée to the sugar mixture and strain. Place strained mixture in the fridge and allow to completely cool, this will take about 2 hours. Churn the mixture in an ice cream machine it should take about 40 minutes. Serve on top of thinly sliced plum rounds
