Brie, steak and caramelised red onion on toasted ciabatta

Your guests will love this gastro take on a ‘Philly Cheese’      

Serves 5

  • 50g butter
  • 1 tbsp olive oil
  • 1 red onion, finely sliced
  • 350g sirloin steak
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 50g butter, melted
  • 10 ciabatta slices
  • 1 brie cheese, cut into slices
  • salt and pepper, to season
  • 10g basil micro herbs

1. Preheat the oven to 180°C.

2. Heat 50g butter and the olive oil in a pan over low heat. Add the red onions and fry for 30 min until golden and caramelised.

3. Heat a grill pan on high.

4. Season sirloin with olive oil, salt and pepper. Grill on each side for 4 min. Rest for 10 min and then slice into thin pieces.

5. Brush ciabatta slices with melted butter and toast in the oven for 10 min until golden and crisp.

6. Top ciabatta with brie slices, sirloin and caramelised red onion and place in the oven for 5 min to melt the cheese.

7. Season with salt and pepper and garnish with basil micro herbs.
