Tomato Chilli Jam

  • olive oil
  • 2 red onions, finely sliced
  • 2 garlic cloves, finely sliced
  • 3 dried red chillies, deseeded and sliced
  • 600g cherry tomatoes, halved
  • 4 tbsp brown sugar
  • 4 lemons or limes, juiced

Heat saucepan and add a drizzle of oil. Fry the onions and garlic for 10 min. Add the chillies, tomatoes, sugar and lime juice, and simmer until you have a sticky sauce.
