You will need about 1/4 cup of the dry spice rub mix to cover a whole chicken, so this is enough for about 4 uses.
- 3 tbsp brown sugar
- 3 tbsp paprika
- 1 tbsp dried onion bits
- 1 tbsp dried thyme
- 1 tbsp rock salt
- 1 1/2 tsp dried garlic flakes
- 1 tsp roasted ground cumin
- 3/4 tsp cayenne pepper, or to taste
- 2 tsp rainbow peppercorns
Mix all ingredients together in a bowl until well combined. Store in an airtight container or grinder until needed.
