Delicious Mixed Berry Jam

Makes 1,2kg

  • 1kg mixed berries, strawberries, raspberries, blueberries and blackberries
  • 1/2 lemon, squeezed
  • 800g sugar
  • 1 vanilla pod, split open

Place the mixed berries in a large pot with the lemon juice, sugar, vanilla pod and simmer over a low heat until the sugar has dissolved. Bring to the boil and boil gently for about 10 min. Take the pot off the heat and remove the scum with a slotted spoon. Remove the vanilla pod and allow to stand for 15 mins, decant into sterilised jars, and refrigerate.
