Cider-Battered Hake

Serves 4

  • 500g self-raising flour
  • 330ml cider
  • 330ml water
  • 1/2 tsp salt
  • 1 litre oil, for frying
  • 4 x 200g pieces of hake

1. Sift the self-raising flour and salt into a large bowl; pour in the cider and water and beat with a whisk, until just combined.

2. In a large saucepan, heat the oil. Coat the fish with the batter and slowly drop the fish into the oil, frying one piece at a time.

3. Serve with homemade oven-baked chips and a crispy green salad.
