Candied Walnuts

  • 200g walnuts
  • 200g caster sugar
  • 50ml water
  • salt and pepper

1. Preheat the oven to 180C and roast the walnuts until golden.

2. Combine the sugar and water in a heavy-based saucepan over medium heat until sugar has dissolved. 

3. When the sugar starts to become golden around the sides, swirl the pan so that the sugar colours evenly.

4. Lightly oil a sheet of baking paper and evenly distribute the walnuts onto the paper. Sprinkle over the salt and pepper to taste. Pour over the dark golden sugar and leave to set. Take care not to burn yourself.
