Salad in a Jar Recipe

Serves 4

  • 4 handfuls rocket
  • 1 large fennel bulb, thinly sliced
  • 60g hazelnuts, lightly roasted
  • 4 courgettes, shaved with a peeler
  • 35g micro greens
  • 150g feta, cubed or crumbled
  • 1 red onion, thinly sliced

For the dressing:

  •  1/2 cup good quality olive oil
  • 3 tbsp white balsamic vinegar
  • Maldon salt 
  • Freshly-ground black pepper to taste
  • 1 tsp Dijon mustard

For the salad:

1. You will need 4 glass jars. Layer all the salad ingredients in the jars. 

For the dressing

2. Combine all ingredients in a blender; a creamy emulsion will form within 30 seconds. Taste and season more if necessary.
