Open Welsh Rarebit Sandwich with Fresh Garden Rocket

  • 1 tbsp butter
  • 1 tbsp flour
  • 100g Gruyère cheese, grated
  • 100g matured cheddar cheese, grated
  • 1 egg, whisked
  • ½ tsp English mustard
  • 2 tsp Worstershire sauce
  • ½ a tsp paprika
  • ½ a tsp cayenne pepper
  • 100ml beer
  • 2 slices white bread, toasted
  • handful fresh garden rocket

Mix butter and flour to form roux. Add cheeses, egg, mustard, Worstershire sauce, paprika, cayenne. Then add the beer. Stir well so cheese melts into mixture. Place slices of bread on an oven tray, and pour the welsh rarebit mixture over the bread. Put under the element of oven till a light golden brown. Serve with a few rocket leaves.
