Basic Wholewheat Bread Recipe

  • 3 cups warm water
  • 2 packages active dry yeast
  • 2/3 cup honey
  • 5 cups bread flour
  • 3 tbsp butter, melted
  • 1 tbsp salt
  • 5 cups wholewheat flour
  • 2 tbsp butter, melted

Mix warm water, yeast and honey in a large bowl. Add bread flour and stir. Let it sit until big and bubbly—about 30 minutes. Mix in butter, honey and salt. Stir in 2 cups of wholewheat flour. Sprinkle some flour on your table and knead with wholewheat flour until it starts just pulling away from the table. It should be slightly sticky (add additional 3 cups of wholewheat flour as needed). Place in a greased bowl, turning once to coat the surface of the dough. Cover the bowl with a dishtowel and let it rise, in a warm place, until double its size. Punch down, and divide into 3 loaves. Place in greased 22 x 12 cm loaf pans, and allow to rise until dough has risen above the pans by 2cm. Bake at 175ºC for 25 to 30 minutes. Lightly brush the tops of loaves with melted butter when done. This will stop the crust from getting hard. Cool completely.
