Ingredients
• large zucchinis
• Rosa tomatoes
• bread crumbs
• grated low-fat or full-fat cheese
• grated Parmesan cheese
Method
1. Cut a zucchini in half lengthwise and trim a little off the bottom and top
2. Scoop out the seeds are with a spoon.
3. Brush the surface with a mixture of crushed garlic, olive oil, salt and pepper
4. Arrange halved baby Rosa tomatoes into the grooves, sprinkle with bread crumbs and bake in a 180°C oven for about 30 minutes.
5. Remove and place mozzarella in between the tomatoes, place the boats back in, but now under the grill until golden and bubbling.
6. Remove and drizzle with olive oil and a sprinkling of grated Parmesan.
