Wine was Sean’s primary passion until a few years ago when he met his wife and it was displaced. Then 18 months ago it was shifted yet another rung down when his son was born, although he notes that children add a whole new dimension to ones relationship with wine! Still very important in his life, Sean will work his 7th vintage as the winemaker at South Hill Vineyards in the Elgin Valley. I’ve really enjoyed writing these musings over the last few months, but as all my wines are resting quietly—the reds in barrel, the white and rosé in tank—waiting to be prepared for bottling, the 2012 harvest can only now be spoken of in the past tense.
As we discussed previously, red wines are left to ferment on their skins in order to extract colour, tannin and flavour. 
All the grapes are in. But contrary to the popular belief that all we
winemakers do now is sit around and drink the spoils of our harvest and
wait for the next one, there is still a lot of work to be done before
the drinking can start!
Will the promise of a relaxing long weekend motivate winemakers to move quickly?
Last week came and went in a flash. I managed to get all my rosé into
the cellar and by Friday the pink juice was inoculated with yeast to
start it on its journey to becoming wine.
Some of you who know me may be surprised to learn I wasn’t in fact being
facetious when I suggested that yeast could suffer from stress.
