Giffard syrups and liqueurs are a new addition to the South African cocktail and liquor market. Hailing from France, Giffard has been creating liqueurs since 1885. The uniqueness of Giffard syrups and liqueurs is the use of maceration during the fermentation process. Maceration is the time during which the fruit’s juice is left in the vat and in contact with the fruit solids (skins, stems and seeds). The length of this process will vary according to the level of tannin and depth of colour required. Giffard offers flavours such as Green Melon, Watermelon and Crème De Cassis, the last winning a gold medal for Best Cassis in the World 2008.
