How does the position of the café affect your menu?
We have so many visitors a day that we need to cook in bulk but still have visual appeal and great taste. We also have a large number of closed days due to weather, which means the menu has to be able to get done fairly quickly.

What is your favorite local ingredient?
Fresh herbs and loads of them, including garlic. I even have an herb garden growing at the bottom of the mountain, where we can get some of our herbs at the moment.

The cafe is said to be ‘committed to reducing its carbon footprint’, what measures have been taken to do so?
We don’t use porcelain plates for our food but use the bio-compostable plates, which will breakdown into water, Co2 and compost within 42 days—if for some reason they fall down the side of the mountain. This has lowered our water consumption. We also have separation bins for our rubbish, are using unbleached paper serviettes and toilet paper, and are using sustainable fish sources.

Harry is married to Laura and they have a daughter, Hannah Mae, who is 11 months old. They live together with their Jack Russell, Lucy Liu, and two cats, Shira and Bicardi in Tableview.
